I use my Direto with Zwift and pair it to my Laptop via Bluetooth as a power source and controllable trainer. This then means that I can't also pair it to my Polar Vantage M watch, to record my training in Polar Flow. Will it ever be possible to connect the Direto to multiple bluetooth connections or should I use an ANT+ dongle to connect to Zwift?

It's not possible. As you say, it's necessary to use the ant+ dongle with Zwift to use this double configuration
